Mamacita's Chicken and Wild Rice Soup
Feeling down? Under the weather? Like you need a hug? My mom's Chicken and Wild Rice Soup will cure all of those things, while warming your soul. It's one of my oldest and most craved/requested recipes. It's creamy without being fatty and super easy to make. Serves 8.
Ingredients
1 small breast of chicken, cooked and cubed
3 tablespoons butter
3 carrots, peeled and diced
3 stalks of celery, diced
1 medium yellow onion, diced
1/2 cup flour
Box of wild rice with seasoning (I use Uncle Ben's)
8 cups chicken broth
1 cup fat-free evaporated milk
Salt, to taste
Pepper, to taste
Instructions
Cook rice according to box (I don't add the optional butter/olive oil)
Cube chicken, toss with olive oil, salt and pepper and cook in stock pot over medium heat until it's almost cooked through. Remove and set aside. (It will finish cooking in the soup)
In that same pot, melt the butter and add the carrots, celery and onions and cook until tender crisp (Maybe that's a made up word but I don't like mushy veggies in soup and they will continue cooking in the broth, so keep that in mind).
Add the flour and stir thoroughly. Then add the chicken broth, cooked rice and chicken and bring to a boil. Turn the heat to low and simmer for 5 minutes. Then add the evaporated milk and simmer for another 5 minutes or until the veggies are tender.
Garnish with snipped chives and enjoy that hug!
