Farro Salad With Shaved Broccoli and Parmesan
Want a way to make it still feel like summer even though it's freezing outside? Make this light and fresh salad. It tastes like summer and feels like....Ok, too much of a stretch? You might be cold, but this is quick, easy and delicious and why wait several months to make it? The recipe is from my (pretend) BFF Jessica Seinfeld's newest cookbook called Food Swings. (Serves 4)

Ingredients
1 cup cooked farro (see package, I like it a little firm)
1 small head broccoli, including the stalk, sliced thin (yes, you can eat that part too! Slice it width wise to get little broccoli coins)
6 radishes, sliced thin
1/2 cup basil, torn
1/4 cup flat leaf parsley, chopped
1/3 cup Parmesan cheese chunks (use tip of a paring knife to break off tiny pieces)
Vinaigrette
1/4 cup extra virgin olive oil
1/4 cup freshly squeezed lemon juice
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Instructions
While the farro is cooking, put all vinaigrette ingredients in a mason jar, cover and shake.
Once the farro cools a bit, stir all the ingredients in large bowl, toss with the vinaigrette and enjoy! Simple as that.
