Acai Bowls

Acai Bowls

For when you want something sweet, but don't want to hate yourself after.  Perfect for breakfast, dessert, post-workouts, dinner...It's a bowl for all occasions.  Serves 1-2. 


Ingredients

1 pack frozen unsweetened Acai (I use Trader Joe's or Sambazon) 
1/2 frozen banana
1/2 cups additional frozen fruit - use what you have! (I usually use berries) 
1 tablespoon nut butter (I use almond when I'm trying to be good, peanut butter when I want it to taste extra delicious!) 
Few tablespoons coconut or almond milk
Toppings - sliced almonds/other nuts, goji berries, cacao nibs, unsweetened coconut, muesli and bee pollen are some of my favorites. 


Instructions

(TIP: I like to put my bowl in the freezer while I'm making the mixture so it is nice and cold.  It's not necessary, but #foodforthought).  

Run the acai packet under warm water for 15 seconds to help defrost it a bit.  

In a blender or Vitamix, add the acai, frozen fruit, nut butter, and coconut milk and blend until smooth.  You can gradually add more milk, if necessary, to achieve ultimate smoothness.

Add the mixture to the (possibly cold) bowl and add the toppings of your choice.  I tend to not add additional fruit on top because there's quite a bit blended in the mixture, but you do you.
