Royal Icing
Frosting sugar cookies with royal icing is probably my most time consuming recipe (and at times I want to pull out my hair while doing it), but it’s worth it when the cookies are done. It creates such a smooth, pretty cookie and tastes good too!
Ingredients
1 pound powdered sugar
5 tablespoons meringue powder (I use ChefMaster, but Wilton also makes this)
Water or fresh lemon juice as needed
Instructions
In the bowl of an electric mixer (paddle attachment), combine sugar and meringue powder.
Mixing on low speed, add a 1/2 cup water (or less water and some fresh lemon juice).
For a thinner consistency, usually used for flooding, add more water.
A thicker consistency is generally used for outlining and adding details.
Divide into bowls and use food coloring gels to color the frosting.
Then transfer to icing bottles or pastry bag with tips.
