Oreo Truffles

Oreo Truffles

These have turned into a staple of mine.  They are technically simple to make, but can be tedious if you’re a perfectionist like me.  That being said, they are totally worth it.  Plus, I use low-fat cream cheese so they are basically healthy.  


Ingredients

1 package of Oreos (Regular, Mint and/or Peanut Butter) 
1 box of low-fat cream cheese, softened (I use Neufchatel)
1 bag milk chocolate chips or meltaway discs (These are my favorite)   
Wax paper 


Instructions

In food processor, blend Oreos until they are the consistency of sand.  Depending on size of processor, you might need to do this in batches.  

Add softened cream cheese and blend.  It should form into a large ball like shape.

Wrap the dough in saran wrap and refrigerate for an hour (or more) to make it easier to work with.  I sometimes make and freeze the dough ahead of time as well.  

Roll chilled dough into balls - the firmer the better for dipping.

Double boil* chocolate.  Then dip balls in chocolate and and place on wax paper to harden.  

You can decorate the truffles using Oreo crumbs, sprinkles, or pipe other chocolate on them using a zip lock bag (just fill and cut the tip). 

I also make mint and peanut butter truffles using the flavored Oreos.  Because those are double stuffed, you only need ¾ of a pack of cream cheese.  If you can’t find the flavored ones, use just a few drops of mint extract or a teaspoon of peanut butter.  

Pop them in your mouth and enjoy!

*Boil 1 inch of water in pot, shut off heat, then put glass bowl of chocolate on top of it - not touching the water.  It will heat the chocolate without burning it.  Stir as needed.
