Overnight Oats
Sometimes I want a hearty breakfast that's still healthy. And sometimes I have zero time to make that breakfast in the morning. Overnight oats are the answer. They take just a few minutes to make the night before and this recipe is gluten free, dairy free, has no added sugar AND still tastes delicious. Plus, it actually fills you up.
Ingredients
Mason jar
1/4 cup gluten free oats (I use Bob's Red Mill)
1/2 of a granny smith apple, diced
1/2 cup unsweetened coconut or almond milk
1 tablespoon sliced raw almonds
1 tablespoon toasted, unsweetened coconut
Generous sprinkle of pumpkin pie seasoning
Optional: Drizzle of honey if you need a bit more sweetness.
Instructions
Put all ingredients in the mason jar and stir. Cover and refrigerate overnight.
The next morning, ENJOY!
