7 Layer Veggie Sandwich
This recipe is perfect for when you have a stocked veggie drawer but no ideas about what to make. It's actually more so a meal inspiration than a recipe because nothing is precise, but you'll get the idea. It's quick, easy and colorful - the perfect work from home lunch. And as always, use what you have. Feel free to make it an 8 layer sandwich. Swap the veggies. Go crazy!
Ingredients
Ezekiel bread, toasted (I use sesame)
Hummus
Avocado, smashed (Exactly what it sounds like)
Carrot, julienned
Radishes, sliced
Fresh spinach
Sprouts (I use alfalfa)
Grape or cherry tomatoes, sliced thin
Salt
Pepper
Red pepper flakes
Mustard, optional
Instructions
Toast the Ezekiel bread.
Spread one side with hummus and the other with smashed avocado.
Pile the veggies on high.
You can add a little mustard if that's your thing. It will help the two layers stick together.
Sprinkle with salt, pepper and red pepper flakes.
Carefully assemble.
